 Crystallization of Honey.


This is a natural and normal process with raw and undiluted honey.


This is to say that fake honey don't crystallize. 


I noticed  it the first time when I started selling honey  newly but because I am sure of my honey I didn't  


What comes to your mind when you

see your jar of raw honey looking like

these pictures below?


Well what you are seeing is a process

known as CRYSTALLIZATION OF

HONEY

.

Many assume that any honey looking

like this is either adulterated or spoiled.

THIS IS NOT SO PLEASE!


Honey crystallization is the formation

and growth of sugar Crystals in a

container of honey. It is a natural

process and not a sign of adulteration

or spoilage!

Raw unheated honey(unpasteurized)

has a natural tendency to crystalize

over time with no effect on the honey

other than colour and texture.


This process is nature's way of preserving

honey. It can be in this state for years

and still retain it's nutritional values,

taste, flavour and quality.


Some honey crystalize uniformly while

some will be partially crystalized by

forming two layers with the crystalized

layer at the bottom of the jar and the

liquid part on top.


Crystallization is caused by the ratio of

glucose to fructose. Being that honey is

a supersaturation of two sugars which

are glucose and fructose, when the

ratio of glucose is higher than that of

fructose due to the type of nectar the

bees used, it further enhances the

crystallization process and makes it

faster.
